  2. Prepare 1 head of cauliflower.
  3. You need 1/4 cup of flour.

  6. Prepare 1 of yellow onion, minced.
  7. Prepare 2 tbsp of minced garlic.
  8. It's to taste of salt & pepper.
  9. It's 1 cup of milk.
  10. Prepare 4 cups of chicken broth.
  11. Prepare 2-3 tbsp of butter.
  12. Prepare 6 slices of bacon.
  13. Prepare 1/2 cup of chopped parsley.
  14. Prepare 1/4 cup of cheddar cheese.

  1. Heat skillet & fry bacon until fully cooked & crispy. Place on a paper towel lined plate to absorb any grease. Set aside to cool..
  2. In a large stockpot melt butter at the bottom, then sauté onion, celery, garlic & carrots until tender..
  3. Roughly chop head of cauliflower & add to stockpot to sauté until just barely crisp. Add bay leaf as well..
  4. Now add flour, stir. Then gradually add milk & chicken broth. Whisk constant for 5 mins..
  5. Bring to a boil, stirring occasionally for 15mins or until cauliflower is completely tender & chowder looks smooth. Let simmer & stand for about 7 mins. Garnish each serving with bacon (crumbled), chopped parsley & cheddar cheese if desired. Enjoy!.
