Ingredients of Cauliflower Cheese

  1. You need 1 large of Cauliflower.
  2. You need 300 ml of Milk.
  3. You need 250 grams of Mature Chedder cheese.
  4. Prepare 3 tbsp of Plain (allpurpose) flour.
  5. Prepare 50 grams of Butter.
  6. It's 1/2 tsp of Mustard powder (English).
  7. It's 1 pinch of Nutmeg.
  8. You need 1 of Salt & black pepper to taste.
  9. It's 25 grams of Breadrumbs (optional).

Cauliflower Cheese step by step

  1. Otional - pre-heat oven to 200 C (400 F)..
  2. Cut the cauliflower into small florets & wash..
  3. Boil in salted water for 10 minutes until just tender..
  4. Drain and place in a buttered oven-proof baking dish..
  5. Put the milk, flour and butter in a saucepan..
  6. Apply modrate heat and whisk continually until the sauce thickens, boils and is smooth..
  7. Add three-quarters of the grated cheese, mustard, nutmeg and seasoning to the saucepan..
  8. Allow to simmer for a further 2 minutes, stirring well..
  9. Pour the sauce over the cauliflower..
  10. Mix the remaining cheese, and (optional) breadcrumbs, and sprinkle over the top..
  11. Finish under a hot grill (broiler) until golden brown (or place in the pre-heated oven for about 15 to 25 minutes) until golden brown and bubbling..
  12. Serve immediately as a starter or alongside your favourite dish. We enjoy it with both chicken and fish dishes..
