Ingredients of Cauliflower Cheese
- You need 1 large of Cauliflower.
- You need 300 ml of Milk.
- You need 250 grams of Mature Chedder cheese.
- Prepare 3 tbsp of Plain (allpurpose) flour.
- Prepare 50 grams of Butter.
- It's 1/2 tsp of Mustard powder (English).
- It's 1 pinch of Nutmeg.
- You need 1 of Salt & black pepper to taste.
- It's 25 grams of Breadrumbs (optional).
Cauliflower Cheese step by step
- Otional - pre-heat oven to 200 C (400 F)..
- Cut the cauliflower into small florets & wash..
- Boil in salted water for 10 minutes until just tender..
- Drain and place in a buttered oven-proof baking dish..
- Put the milk, flour and butter in a saucepan..
- Apply modrate heat and whisk continually until the sauce thickens, boils and is smooth..
- Add three-quarters of the grated cheese, mustard, nutmeg and seasoning to the saucepan..
- Allow to simmer for a further 2 minutes, stirring well..
- Pour the sauce over the cauliflower..
- Mix the remaining cheese, and (optional) breadcrumbs, and sprinkle over the top..
- Finish under a hot grill (broiler) until golden brown (or place in the pre-heated oven for about 15 to 25 minutes) until golden brown and bubbling..
- Serve immediately as a starter or alongside your favourite dish. We enjoy it with both chicken and fish dishes..
